Chocolate brownie with Homemade Honeycomb

RECIPE: Chocolate Brownie with Homemade Honeycomb

Ingredients for brownie.
1. 187 grams good quality dark chocolate
2. 187 grams real butter
3. 250 grams caster sugar
4. 3 whole eggs
5. Pinch of salt

Ingredients for honeycomb.
1. 5 tablespoons of golden syrup
2. 2 teaspoons bicarbonate of soda(baking soda)
3. 200 grams caster sugar


Method for brownie.
1. Place sugar and eggs in a bowl. Whisk till creamed.
2. Add vanilla essence and eggs.
3. Whisk till "ribbon stage".
4. Add flour to the mix and whisk.
5. Melt chocolate and butter in a bowl over a pot of water in a bowl.
6. Allow mixture to cool.
7. Add chocolate mix to the original mix and whisk till smooth.
8. Transfer mix to prepared baking tray.
9. Bake in preheated oven for 40 mins at 180 degrees.


Method for honeycomb.

1. Place the sugar and golden syrup in a medium sized pot.
2. Place on heat and allow to melt.
3. Using a thermometer remove mix when it reaches exactly 149 degrees.
4. Whisk in bread soda.
5. Pour bubbling mixture into a baking tin and allow to cool.
