Delicious... Try Pearse and Ben's Baked American Cheesecake with Winter Berry Compote

RECIPE: Baked American Cheesecake with Winter Berry Compote 

Ingredients. 
1. 750 grams full fat soft cheese 
2. 300 milliliters of fresh cream. 
3. Two lemon juice and zest. 
4. Two whole eggs
5. Three tablespoons of corn flour,
6. 200 grams caster sugar

Biscuit Base
1. 500 grams of digestive biscuits. 
2. 120 grams melted butter. 

Compote
1. 200 grams frozen mixed berries. 
2. 50 grams castor sugar.
3. Half glass red wine.

The Method. 
1. Soften cream cheese in a bowl. At the eggs. Whisk. 
2. Add sugar. Whisk. 
3. Add lemons and whisk till smooth.
4. Add cornflour and finally whisk the entire mix until smooth. 
5. Crush biscuits in a mixing bowl or with a rolling pin. Slowly add butter. 
6. When the biscuit base has a wet sandy texture transfer to the baking tin. 
7. Chill base in fridge for 30 minutes. 
8. Add the mix to the base and cook in a Bain Marie in oven for 35/40 minutes.
